Im assuming you have a VP going by your nic, as the cars got newer i think it was made a saftey feature on all cars, i guess the only way you can do it is wire up yourself a relay to a switch to turn it on when you want.
Can i ask y you would want it off with the doors open?

Just find the wire that goes to it in say the multiconnector box behind the right hand kick panel and put a switch in series with the wire that goes to the dome lamp
I'd look at finding a replacement center dome. Perhaps one off of a later model, or maybe calais/statesman. One that has a switch on it.
Basically you want to break the ground fed to the light by the door, or interior light switch.
