Bleed the air.
I am planning on changing the sensor next week with a full coolant change so will bleed everything after install. Hopefully it will fix the issue. I have noticed increase fuel consumption and have read the sensor can cause this due to incorrect temp readings.

Hey mate how did you go? What was the problem in the end.?
I'm having same issue where temp reading is 3/4 about 118c. When parked the fans are constantly on when idle and temp not going down.
When I rev the engine temp keeps dropping. Soon as I idle temp goes up again

If you go through the steps out lined here:
There’s a massive chance your problems are resolved. Or you could just stare at it and do nothing and never resolve it.

In the end I replaced the radiator cap. This increased the cooling system pressure and didn’t have any further issues
